- 1. Cut the beef into thin slices. 2. For the marinade, mix the soy sauce, sesame oil, sherry and cornflour together in a bowl. Add the beef, spoon over the marinade and leave to marinate for a few minutes. 3. To cook the beef, heat the vegetable or groundnut oil in a wok until it’s very hot. Add the beef and the marinade and stir fry for about one minute. 4. Carefully pour the stir-fried beef into a sieve set over a bowl to strain off the excess juices. Discard the juices and set aside the beef until ready to serve.

- 1. Heat a large non-stick frying pan over high heat. Spray both sides of the salmon with olive oil spray. Add salmon to the pan, skin-side down, and cook for 2–3 minutes or until crisp. Turn and cook for a further 1–2 minutes for medium. 2. Meanwhile, combine the soy sauce, sugar, ginger and half the sesame oil in a small bowl. Stir until the sugar dissolves. Cook the gai lan in a saucepan of boiling water for 30 seconds or until bright green and tender crisp. Drain. 3. Divide the gai lan and rice among serving dishes. - Preheat oven to 350 degrees F (180 degrees C) and place the oven rack in the center of the oven. Butter, or spray with a non stick vegetable spray, a 17 by 12 inch (43 × 30 cm) sheet pan. Line the pan with parchment paper and then butter and flour the paper (or spray with vegetable/flour spray.) While the eggs are still cold, separate the eggs, placing the whites in one bowl and the yolks in another. Cover with plastic wrap and bring to room temperature before using (takes about 30 minutes). Meanwhile melt the chocolate in a stainless steel bowl placed over a saucepan of simmering water. Let cool to room temperature.

- Cook the noodles as directed on pack Combine cinnamon stick, star anise, soy sauce, salt and stock in a large pan and bring to the boil. Lower heat, and add the meat and cook for 30 seconds until the meat is tender. Skim any fat off the top of the pan, and add the noodles. Ladle into individual bowls and serve, garnishing with the mint, chilli, spring onion, bean sprouts and coriander and a squeeze of lime.
- For the dressing, mix the fish sauce, lime juice and rice wine vinegar in a small bowl. Add the grated palm sugar, stirring until completely dissolved. Add the garlic and chilli then taste to make sure the flavours and balanced. It should be zesty, sweet and fresh, with depth from the fish sauce. Place the chicken in a deep pan, cover with water and bring to the boil. Reduce the heat and simmer for 10–15 minutes, or until cooked through. Transfer to a bowl of iced water to cool, then drain and shred the chicken and place the meat in a large bowl. Add the remaining salad ingredients to a bowl with the chicken and toss to combine. Divide among serving plates and drizzle lightly with the dressing. Sprinkle over peanuts, coriander leaves and chilli to serve.
